What’s the difference, and what’s the big deal?

While cocoa powder is made from cold-pressed and unroasted cacao beans, cacao nibs are a dried/fermented bit of the cacao bean. The powder will taste similar to what you would expect the unsweetened hot cocoa mix to taste like, whereas cacao nibs are similar to crunching on a roasted coffee bean. 

Another key difference is the nutritional benefits of cacao nibs. Cacao is higher in protein, fiber, magnesium, and iron than cocoa powder. Cocoa powder (without sugar) is still nutritious, just not as nutritious as cacao powder, although oftentimes cocoa may be the more budget-friendly option.
